scotch eggs

4 hard boiled eggs peeled
8oz sausage meat
1 raw egg beaten
flour seasoned with salt and pepper
bread crumbs
foil

Wrap the hard boiled eggs in 2oz of sausage meat
make sure they are totally covered
roll in the flour
dip into the beaten egg
roll in the breadcrumbs till covered
deep fry until golden brown
place on a baking tray covered in foil
then place on a rack in the oven gas mark 6 /200 degrees celsius

serve with a lovely summer salad
