scotch eggs

4 hard boiled eggs peeled
8oz sausage meat
1 raw egg beaten
flour seasoned with salt and pepper
bread crumbs
foil

Wrap the hard boiled eggs in 2oz of sausage meat
make sure they are totally covered
roll in the flour
dip into the beaten egg
roll in the breadcrumbs till covered
deep fry until golden brown
place on a baking tray covered in foil
then place on a rack in the oven gas mark 6 /200 degrees celsius

serve with a lovely summer salad

Home made apple crumble

3 cooking apples
8oz plain flour
4oz brown sugar
4oz margarine
cinnamon powder

peel and core the apples and chop into small pieces and put in a pan with all the cinnamon
rub flour margarine and sugar into breadcrumbs
cook apples till they become mushy then place into oven proof dish
sprinkle the crumb mix over the  top of the apples
place in oven at gas mark 6 or 200 degrees celsius
cook for about 25 mins till golden brown
serve with custard or cream
